Easy gluten free Cheese bread (Pao de Queijo)

Easy gluten-free Cheese bread (Pao de Queijo)

I was in the mood for some Pao de Queijo the other day but didn’t want to spend too much time making them, so I came across a simple recipe and I was absolutely surprised with the results. 

They tasted great and it only took a fraction of the time to make them and best of all these are gluten-free cheese bread.

You will need a cupcake tray and a blender.

Ingredients:

4 cups of Cassava Starch (AKA tapioca flour, tapioca starch, etc, etc), in London I find it at Chinese/ Oriental food shops.
2 cups of milk.
1 cup of vegetable oil, plus some for oiling the cupcake tray.
2 eggs.
100 gr of cheese, I use mature cheddar.
1 teaspoon of salt.

Method:

Pre-heat the oven to 200Cº

To a blender add:
The cassava/tapioca starch, eggs, milk, oil, salt, and cheese.
Blend it for a minute or two until the ingredients are well mixed.
Using a brush or kitchen towel, spread some oil around each cupcake slot.
Using a large spoon, try to put the same amount of batter (the one we just blended) into each slot on the tray.
Bake for 20 – 25 min or until slightly golden.

 At its best just a few minutes after coming out of the oven.
Also great with coffee.
If you want to get creative, slice it in half and add ham and cheese, or even some jam.
