Frango a Passarinho (Brazilian fried chicken)

Typical tapas style food that you would order at a bar and various other social locations in Brazil usually served as sharing platter while drinking with friends. Frango a passarinho is the Brazilian answer to crispy fried chicken, crunchy and delicious.

This dish is a very typical tapas style type of food that you would order at a bar, while drinking with friends. Nothing like super crispy chicken and very cold beer πŸ˜‰ . I really like it, the chicken is crunchy and it tastes delicious.

Ingredients
  1. 1 x whole chicken (or pre-cut thighs)
  2. 2 - 3 cloves of garlic
  3. 2 x bay leaves
  4. 1 x juice of lime
  5. salt and black pepper to taste
  6. Spring onions and coriander to garnish
Instructions
  1. If you got a whole chicken, cut the pieces at the joints, the cut them again in half (this is the passarinho / birdie style way of cutting the chicken).
  2. Do the same if you have bought already cut pieces, just cut them in half. (might need a heavy knife).
  3. Now mash the garlic into a paste with some salt.
  4. In a bawl, add the cut chicken, add the garlic paste, add some more salt, black pepper and the juice of a lime and bay leaves.
  5. Mix it really well cover it and put it in the fridge for at least 1 to 2 hours... Better overnight.
  6. In a tall pan, add some oil (enough to cover the chicken) heat it up to about 180C.
  7. Add some of the chicken (not too much as you don't want to cool the oil too much and the oil might over spill).
  8. Cook for about 10 minutes or until the chicken is really brown.
  9. Garnish it with some spring onions and coriander.
  10. make sure your beer is really cold and you have some good company.... Enjoy.
Serving options
  1. Selection of deeps, most common serving dip is a mild chilly dip.
  2. Sliced limes
  3. Cold beverage of your choice πŸ™‚
