Frango a Passarinho (Brazilian fried chicken)

Typical tapas style food that you would order at a bar and various other social locations in Brazil usually served as sharing platter while drinking with friends. Frango a passarinho is the Brazilian answer to crispy fried chicken, crunchy and delicious.


- 1 x whole chicken (or pre-cut thighs)
- 2 - 3 cloves of garlic
- 2 x bay leaves
- 1 x juice of lime
- salt and black pepper to taste
- Spring onions and coriander to garnish
- If you got a whole chicken, cut the pieces at the joints, the cut them again in half (this is the passarinho / birdie style way of cutting the chicken).
- Do the same if you have bought already cut pieces, just cut them in half. (might need a heavy knife).
- Now mash the garlic into a paste with some salt.
- In a bawl, add the cut chicken, add the garlic paste, add some more salt, black pepper and the juice of a lime and bay leaves.
- Mix it really well cover it and put it in the fridge for at least 1 to 2 hours... Better overnight.
- In a tall pan, add some oil (enough to cover the chicken) heat it up to about 180C.
- Add some of the chicken (not too much as you don't want to cool the oil too much and the oil might over spill).
- Cook for about 10 minutes or until the chicken is really brown.
- Garnish it with some spring onions and coriander.
- make sure your beer is really cold and you have some good company.... Enjoy.
- Selection of deeps, most common serving dip is a mild chilly dip.
